Meal prep fails when it becomes a four-hour Sunday marathon. This one-hour framework produces components, not rigid meals, so the week stays flexible.
Cook components, not meals
Instead of assembling seven identical containers, cook three categories in bulk: a grain, two proteins and a tray of roasted vegetables. Mix and match through the week so nothing feels repetitive by Wednesday.
The 60-minute sequence
Work in this order so the oven and stove run in parallel.
- 0–5 min: preheat the oven, put a pot of grains on to simmer.
- 5–20 min: chop vegetables, toss with olive oil and seasoning, roast on two trays.
- 20–35 min: cook the proteins — sheet-pan chicken thighs and a pan of spiced lentils.
- 35–45 min: whisk two dressings, one lemon-tahini, one herb vinaigrette.
- 45–60 min: cool, portion into containers, label with the date.
Keeping it fresh
Store dressings separately and add fresh elements — herbs, avocado, a squeeze of citrus — at serving time. That single habit is the difference between food you look forward to and food you throw out on Friday.
